End of Summer Food Highlights

Happy Thursday folks! Welcome to another food highlight post. We had a few dinners with friends and family this week that I forgot to capture, and it seems like I’m a little on food photos this week in general. Oh well. I’ll share what I’ve got, and as always feel free to join in in the comments sections with what you’re eating this week!

We were in the mood for pizza again last Thursday since it was so good the week before. This time we got the hot honey pepperoni, and an italian sausage pizza. Wood fired thin crust pizzas are my new favorite! I’ll never be able to replicate these at home, I can’t get the dough super thin without breaking it.

Who doesn’t love a classic breakfast of toaster waffles smothered in butter, maple syrup and fresh berries. This was Josiah’s breakfast the other day, while I ate leftover pancakes (what’s new).

Another way we’re loving fresh berries this week is on top of salads. This salad was a base of local mixed greens, berries, goat cheese, avocado and honey roasted almonds drizzled with balsamic dressing. Yum!

Kind of looks like a hot mess, but I made this jalepeno black pepper basil chicken stir fry the other night and subbed cilantro for the basil. I served it on top of our favorite coconut rice. It was good, but once again a reminder that I’m not the biggest fan of stir-fry’s. Hot sauce to the rescue!

Y’all know I can put down a bowl of pasta any day of the week though. And this burst tomato pasta hit the spot. It was literally bursting with summer flavors. An equally light yet satisfying bowl of pasta. I can’t wait to dig into the leftovers later today!

While we’re on a roll with dinners this week, here’s a look at the buffalo cauliflower tacos we enjoyed on Monday night. Taco Monday anyone? Haha. I usually make buffalo cauliflower lettuce wraps but since we had corn tortillas to use up, we opted for the traditional taco route. Topped with shredded lettuce, diced tomato, blue cheese dressing, shredded cheese, and avocado. We’ll call it meatless Monday, how about that?

You might remember this wrap from yesterday’s post, but I’ll give you the full scoop. I’ve totally copied this combo at home, but needed something convenient yesterday after our busy morning. It’s mixed greens, roasted sweet potato, quinoa, gorgonzola, dried cranberries and toasted almonds all tossed in balsamic dressing and wrapped up. This one might have to go on the lunch menu soon. Once you’ve got your roasted sweet potato cubes and quinoa cooked, this wrap comes together in no time.

I’ve been loving the convenience of baked oatmeal this week. Particularly in the form of this salted brown butter banana zucchini baked oatmeal. I’ve been topping it with either cashew butter or peanut butter and berries because I find that any baked oatmeal recipe is best enjoyed with toppings.

Let’s get to the treats already. If you’re anything like me, this is what you came to see-haha! Like these homemade soft pretzels both salty and sweet, a whole lot of doughy goodness right there.

Last but not least, petit chocolate salted caramel thumbprints that my friend Sam made for our get together the other day. I’m sure I got the name wrong, but these bad boys totally stole the show. SOOO SO good. I’ve mentioned Sam’s amazing cookies before on the blog and she swears by The Cookie Book by Rebecca Firth. It’s going on my Christmas list!

Pancakes, French Fries, and Other Food Highlights from the Week

Happy Thursday folks! I hope everyone’s having a good week! I didn’t capture enough food photos to share a highlight post last week, but I’m back with some delicious eats from this week! I’ll be sure to link as many recipes as I can in case you’re interested.

First things first, we’re back to pancakes. After a failed attempt to switch things up due to the fact that James wasn’t touching any of the other breakfast options I was putting on his plate including toaster waffles smothered in butter and maple syrup, I mean come on! How can you say no to that classic breakfast?! So we were left with no choice but pancakes. These are our favorite banana oatmeal blender pancakes topped with peanut butter and blueberries.

How cute are the fries that came with James’s happy meal the other day?! I cant. And yes, we bought our 15 month old son a happy meal, I might have eaten his burger and most of these fries…

We tried to do the breakfast sandwich thing…

But pancakes are currently winning. These are whole wheat zucchini bread pancakes from our fav pancake girl Ambitious Kitchen, and they are amazing! Taste like a treat, but actually really healthy. I topped mine with whole milk greek yogurt and strawberries for some added protein and flavor!

The blueberry avocado quinoa salad that I mentioned last week in Friday Favorites, a little more work than I’d like to put into lunch but worth it in the end.

And then there’s meals that require very little effort like this plate of spaghetti and meatballs. Especially when the meatballs are frozen, but congrats Wegmans on your delicious frozen meatballs!

I see you healthy, but don’t go thinking you’re the star of the show here. Sign me up for the pizza and fries in the back please πŸ™‚ My sister and I took James out to dinner Saturday night. It was a scene. It was far from relaxing. We shoveled this food into our mouths and booked it out of the brewery before disaster struck. James needs practice at restaurants. But we tried and we survived.

Yes to all of this. Marinated BLTA’s are now the highlight of all lunches this summer. It took hardly any effort to add in the marinating step, but wow does a marinated tomato totally turn this sandwich upside down. In a good way.

Thanks to some marinated tomato inspiration I created this summer meal of Caprese Chicken Thighs with Lemon Basil Couscous. Super fast, extra flavorful, and includes all of your summer produce staples.

Green Chile Chicken Burritos turned into quesadillas. Let’s take a vote, are you on team burrito or team quesadilla? I’m pretty close to a 50/50 split, but the quesadilla might take the prize. I find them easier to eat and dare I say, cheesier?!

I’ve got 4 words. Chocolate. Peanut Butter. Lava. Cakes. They sound like the most difficult dessert on the planet, but literally take 15 minutes start to finish. Dangerously easy and oh so decadent.

That’s a wrap. I hope that you’re all enjoying some time in the kitchen this summer cooking up all kinds of yummy foods. And if you own a grill, this is the season for you! We are not a grill family, but maybe in the future you’ll find me on the back patio grilling up all kinds of goodies.

Food Highlights (and Disasters) from the Week

Hello everyone! How’s the week going for you? It’s been a busy one over here, and I’m trying to figure out if I like having a busy schedule or if I prefer things to slow down a bit. I think it’s a matter of embracing summer. The pace will change in the fall and I will be back to craving the nonstop summer activities, might as well enjoy it!

In terms of parenting, James seems to be in a much better mood when our days are filled with lots of running around. I’m guessing he’s an extravert, but it’s probably too early to tell. Either way, I appreciate a happy baby so we’ve been on the move. That means less time for cooking and food photography which is why I titled my post highlights AND disasters. I’m not too impressed with the overall look of this past week’s eats. I’ve also been super lazy about meal planning and grocery shopping, just trying to ease up on myself and let this be a season of less structure and more spontaneity.

Without further ado let’s take a look at our eats from the week!

I didn’t realize that burgers don’t photograph well until looking at this photo. I so wish we had a grill, because nothing beats a grilled burger in the summer, and a burger on the stovetop just isn’t as juicy.

Date night BBQ at Limp Lizard! YUM. Thursday night has become date night and I look forward to it every week! It’s so nice to spend quality time with my husband every week, and it makes the craziness all of the other days more tolerable.

We can’t go a week without some kind of pancake. Especially when there are spotted bananas to use up. I always use overripe bananas to make these blender banana oat pancakes, they are just too easy (and delicious)!

Yup. This was breakfast for James one morning. And it was even easier than it looks because the peanut butter graham cracker sandwiches were leftover from Josiah’s lunch the day before.

I can’t with this donut disaster the other night. Glazed and Confused, your donuts tasted as bad as they looked in this photo. I’m sorry, but EVERY other donut I’ve eaten blows these ones out of the park. For being a specialty donut shop, I’m disappointed. Great job on your social media, but the donut recipes need work.

This salad had EVERYTHING in it! In fact, it was impossible to capture a photo with all of the toppings because they just kept getting buried. I love endless toppings on a salad especially when the combination actually tastes good too!

Who doesn’t want to dive in to a big plate of nachos?! Sign me up! I always overeat on meals like this, it’s just too hard not to!

A Pancake a Day…

We are obsessed with pancakes. Two of us are at least. Josiah would pass on breakfast all together if I didn’t stress the importance of breakfast all the time. His bowls of cereal are comically small, but at least it’s something. I don’t understand people who can eat a small breakfast, or gasp(!) skip breakfast all together. If you fall into one of those categories, please tell me how. I’m the opposite and need a hearty breakfast followed by a mid-morning snack just to get me through to lunch.

Fortunately I have a pancake eater on my team now, kind of. James doesn’t really have a choice, and I’ve found pancakes to be a winner for both of us. Mostly because they are a lot easier than I thought, and there are so many flavors and variations to experiment with. In my experience, pancakes are an optimal baby food as well. James does not like oatmeal in any form, yogurt is hit or miss, cereal too crunchy, toast gets boring, and eggs are a definite no. Which leaves us with pancakes and waffles. I love a good waffle but Lord help me if I’m willing to put that much effort into breakfast on a daily basis. Pancakes on the other hand, much more manageable.

We have been eating pancakes almost every day for a long time. My pancake obsession began with Kodiak cakes which I still love, but I’ve found certain homemade versions to be yummier, just as convenient, and packed with even more nutrients. No shame on the Kodiak and other pancake mix people out there, we love a good mix! I feel like we are nearing the end of our pancake streak, but who knows. In the meantime, here’s a look at some of our fav pancake creations, recipes and topping ideas.

If you’re not pancaked out by this point, I like to make these 4 ingredient pancakes for James because they are super cute and the batter takes less than a minute to make. I personally find the texture of these to be a little weird, but for babies they’re great!

On my pancakes must-make list are these fluffy whole wheat zucchini bread pancakes, especially while zucchini season is in full swing. These lemon blueberry quinoa pancakes sound intriguing and also seem like a summer essential. And for a weekend splurge, these salted brown butter pancakes are next up on the griddle! Maybe I’ll be able to convince Josiah to eat them with us since they don’t have a “healthy” label attached.

Food Highlights from the Weekend

Hey everyone! How was your weekend? I’ll share a few highlights from ours below, but as I edit this post I’m realizing that I didn’t take any photos of the activities we did just the food we ate. I am a work in progress here in the blogging field. But if your interested in some food highlights keep on reading! I linked all of the recipes too in case you’d like to give them a try!

Pancakes topped with Greek yogurt and peaches for James and I to kick off the weekend! We live by the rule, a pancake a day keeps the doctor away.

Naan pizzas for lunch! One was a simple cheese and pepperoni while the other was a roasted buffalo cauliflower. I was originally going to make my own flatbread, but store bought naan came to the rescue instead!

Pizza paired with a side salad of course because #balance. If you’re looking for an italian dressing that tastes homemade but comes together in 2 minutes or less, we love the Good Seasons Italian Dressing mix.

Sally’s chocolate chip cookies to bring over to a neighbor, Josiah’s family, and of course ourselves πŸ™‚

James enjoying a banana muffin as an afternoon snack. When he wakes up from a nap cranky, there’s nothing like a muffin to turn his mood around.

Hello Trader Joe’s mini cone, don’t you look familiar! Seriously guys 10/10.

Moroccan-spiced turkey burgers with lettuce, tomato, avocado and creamy feta sauce. I like to get experimental with burgers, usually in the summer. Turkey burgers tend to be tricky because they dry out easily. I liked the flavor of this burger, but the texture was a little off. I might have overcooked it?

The easiest sheet pan gnocchi with italian bread olive oil, balsamic, and herbs. This is my go-to dinner recipe when I want to make something homemade but also don’t want to put any effort into cooking. 5 minutes of prep and into the oven it goes!
