Pancakes, French Fries, and Other Food Highlights from the Week

Happy Thursday folks! I hope everyone’s having a good week! I didn’t capture enough food photos to share a highlight post last week, but I’m back with some delicious eats from this week! I’ll be sure to link as many recipes as I can in case you’re interested.

First things first, we’re back to pancakes. After a failed attempt to switch things up due to the fact that James wasn’t touching any of the other breakfast options I was putting on his plate including toaster waffles smothered in butter and maple syrup, I mean come on! How can you say no to that classic breakfast?! So we were left with no choice but pancakes. These are our favorite banana oatmeal blender pancakes topped with peanut butter and blueberries.

How cute are the fries that came with James’s happy meal the other day?! I cant. And yes, we bought our 15 month old son a happy meal, I might have eaten his burger and most of these fries…

We tried to do the breakfast sandwich thing…

But pancakes are currently winning. These are whole wheat zucchini bread pancakes from our fav pancake girl Ambitious Kitchen, and they are amazing! Taste like a treat, but actually really healthy. I topped mine with whole milk greek yogurt and strawberries for some added protein and flavor!

The blueberry avocado quinoa salad that I mentioned last week in Friday Favorites, a little more work than I’d like to put into lunch but worth it in the end.

And then there’s meals that require very little effort like this plate of spaghetti and meatballs. Especially when the meatballs are frozen, but congrats Wegmans on your delicious frozen meatballs!

I see you healthy, but don’t go thinking you’re the star of the show here. Sign me up for the pizza and fries in the back please πŸ™‚ My sister and I took James out to dinner Saturday night. It was a scene. It was far from relaxing. We shoveled this food into our mouths and booked it out of the brewery before disaster struck. James needs practice at restaurants. But we tried and we survived.

Yes to all of this. Marinated BLTA’s are now the highlight of all lunches this summer. It took hardly any effort to add in the marinating step, but wow does a marinated tomato totally turn this sandwich upside down. In a good way.

Thanks to some marinated tomato inspiration I created this summer meal of Caprese Chicken Thighs with Lemon Basil Couscous. Super fast, extra flavorful, and includes all of your summer produce staples.

Green Chile Chicken Burritos turned into quesadillas. Let’s take a vote, are you on team burrito or team quesadilla? I’m pretty close to a 50/50 split, but the quesadilla might take the prize. I find them easier to eat and dare I say, cheesier?!

I’ve got 4 words. Chocolate. Peanut Butter. Lava. Cakes. They sound like the most difficult dessert on the planet, but literally take 15 minutes start to finish. Dangerously easy and oh so decadent.

That’s a wrap. I hope that you’re all enjoying some time in the kitchen this summer cooking up all kinds of yummy foods. And if you own a grill, this is the season for you! We are not a grill family, but maybe in the future you’ll find me on the back patio grilling up all kinds of goodies.

Life Without An Oven + Food Highlights

Hey guys! How’s it going? We have been dealing with oven issues this week among other things…ugh! It was just the broiler that wasn’t working but when maintenance came last Friday and realized they would have to order a new part, it turned into the whole oven not working, fortunately the stove top was. On Monday maintenance came with the new part, but it wasn’t fixing the problem and we were left with no oven or stove top! And that’s where we’ve been the rest of the week. In the long run, I know a few days without an oven or stove isn’t a big deal, but it’s been a rough week over here aside from that, and it’s just another thing adding to the stress. On a more positive note, we’ve still enjoyed some delicious meals over here despite our kitchen dilemma, and I will never take for granted a working oven in the future!

Do mine and Josiah’s plates even look like the same meal?? I was experimenting with different plating techniques, which one do you like better? I combined three different recipes to create this dish which sounds super complicated but it really wasn’t. Thank you Ambitious Kitchen for providing the recipes to create this super delicious meal. It was coconut rice (oh my gosh amazing), topped with chili maple lime salmon, and mango salsa. The perfect summer meal!

Blueberries fresh from the field! The best kind of blueberries of course ;). I haven’t made anything fancy with these blueberries yet, hence our oven malfunction, but I did make blueberry almond flour pancakes one morning and those are always a hit with me and James.

I made this rotisserie chicken salad on Thursday night and we liked it but didn’t love it. I think this is a really good salad, the truth is I am just in a salad rut lately. No salad sounds good to me. I might have overdone it with salads the past couple of weeks, and now it’s time for a salad break. Does anyone else relate to this? I feel like I become obsessed with certain meals and I eat them over and over but then there comes a day when I’m just over it.

Buffalo chicken wing dip, now that’s a meal I’ll never get sick of! Just kidding, I probably would if I ate too much of it, but an occasional batch is always happily devoured!

Vegan egg roll in a bowl served over ramen. I made our version with chickpeas because I wasn’t sure how our family would do with the tofu version. I’m not a huge fan of Asian cuisine, but I don’t mind eating a meal like this once in a while. Italian food on the other hand, all day every day!

Saturday morning donuts! I want these back in my life ASAP. I can’t handle looking at the picture.

Sunday was rainy and cold which meant a mid-summer grilled cheese and tomato soup kind of night. My go-to comfort meal when the weather is gross.

French toast with strawberries and cinnamon whipped cream because it was our two year wedding anniversary and I love any excuse to celebrate with an extra special breakfast <3.

Can’t resist an ice cream sundae…especially one that is super reasonably priced. Thank you Dad’s Ice Cream for this mouthwatering (and affordable) treat!

And that’s pretty much all I’ve got for this week’s food highlights. Between not having an oven and also forgetting to take food pictures, it feels like I don’t have a whole lot to share. Oh well. We’ll see what next week brings!

Friday Favorites #4

Hello and happy Friday to you! What’s everyone got planned for the weekend? I’ve got a brunch with my women’s bible study tomorrow morning, a birthday party, post-church celebration and who knows what else! Hopefully lots of outdoor time with family and friends. I find myself already dreading the winter months even though it feels too early to be worried about that. I just don’t want to be stuck inside! Moving on from that thought, I hope that you’ve all had a good week and if you’re interested in some of the things I’ve been loving this week, keep on scrolling.

5 Minute Lunches

I’ve discovered a secret for super quick (and healthy) lunches. This past week James and I have been filling our mornings with lots of activities. It’s been a lot of fun but we’ve been coming home around lunchtime starving and cranky. Needless to say, there isn’t much time to throw lunch together before we both collapse into a meltdown. I sound dramatic, but you get the idea. Lunches have been so rushed in fact, that I’ve barely taken any photos and I’m usually really good about food photos these days. My lunchtime secret is this, use leftovers to make a salad. That’s what I’ve been doing all week and it has actually worked. Granted, salads tend to only keep me satisfied for an hour or so and I always eat a snack while James is napping in the afternoon, but it’s enough to get me through the lunchtime craziness and fill my body with some decent nutrition. I buy a large box of mixed greens every week which is the base of every salad, and I’ve topped my salads this week with all kinds of random fridge items. Earlier this week I noticed a lot of deli meat and cheese so I made a chef salad of sorts. I’ve also enjoyed salads topped with roasted veggie and pesto couscous and find that I barely need to add dressing to that combo. I made a black bean and corn salad on Tuesday night and Wednesday for lunch I topped my mixed greens with that along with a BBQ ranch dressing, literally just BBQ sauce and ranch mixed together in a small container and poured it on my salad with some crushed up tortilla chips. Kind of like the pancake situation over here, I eat a lot of salad. And I get sick of it. So I find the best way to keep salad interesting is to try new combinations, and leftovers have proven to add pizazz to my salads this week.

Wireless Bras

Yup, they’re going on the list. Ever since giving birth to James I stopped wearing all of my wire-lined bras because of nursing and I don’t know if I’ll ever be able to go back. My favorite nursing bras are this one from Amazon, and this one from Gap (unfortunately sold out right now). Honestly I still wear those bras even though I’m not nursing because they are so comfortable. I’ve also been wearing my favorite wireless bra from Aerie, and so bummed that they are sold out right now because I could use a new one. With all of the wireless bras on the market these days, does anyone still wear one with wire? If so, is it comfortable? I put on an old bra the other day (it’s practically new), but the wire was so uncomfortable and irritating. Thank you for the invention of wireless!

Cardomom & Vevitir Candle

Currently in love with this candle from Target. I ordered it for my sister for her birthday after I fell in love with the scent the other day browsing Target. I haven’t bought one for myself (I feel like I need a reason?), so I can’t remember the smell enough to describe it accurately, but it was addicting. If you’re looking for something special to give yourself or a loved one, I would highly recommend this candle.

Diaper Wipes for Household Cleaning

Yes, I now use diaper wipes for household cleaning. Hello motherhood. In particular dusting, but really any area of the apartment that needs a wipe down. There are so many cleaning products to choose from, but one afternoon I noticed dust sitting on all of our surfaces and I had a pack of diaper wipes close by, so I pulled a few out and started dusting. They worked wonderfully! I have to credit my mom for the idea because she used to wet down a paper towel and use it as a dusting rag. Diaper wipes are way cheaper than paper towels, they are soft, and perfectly moist. Give it a try!

Trader Joe’s Focaccia Bread with Roasted Tomato & Parmesan

This bread. I’m in heaven. It’s SO GOOD you guys! Head on over to Trader Joe’s ASAP and get yourselves a loaf. What an awesome grocery store. Wegmans is my first and forever love, but Trader Joe’s is close behind. I haven’t bought a disappointing product yet!
